dhokla

Fluffy pillows of heaven!

*makes three 7 inch plates*

1 cup rava (sooji / semolina)
¾ cup yogurt
¾ cup water
1 tsp salt
1 tbsp ginger chilli paste
1 tbsp eno
1 tbsp neutral oil + extra to grease the plates
Freshly ground black pepper / red chilli powder

  1. Bring a steamer filled with water to boil - this usually takes about 10 minutes so time accordingly. Grease the plates with oil.

  2. Thoroughly mix rava, yogurt and water. Let sit on counter for at least 30 minutes to overnight. When ready to cook the dhoklas, thoroughly mix in the oil, salt and ginger chilli paste. Taste check for salt and spice level - adjust accordingly. Now, add the eno and whisk thoroughly for a minute. Working quickly, pour batter into the greased plates. Sprinkle black pepper / red chilli powder and steam for about 10 to 13 minutes with the lid covered on medium high.

  3. Let cool for 5 minutes before cutting and serve with green cilantro chutney or with hot ghee and dry lasan chutney.
