1 tbsp peanuts, unsalted & raw
40g cilantro
5g mint
¼ tsp salt
1 tsp ginger chili paste (2 marcha, 1 inch adu)
lemon squeeze
2 tsp water
First, blitz the peanuts coarsely in a food processor. Next, transfer rest of the ingredients to the food processor and blend to chutney consistency. If it tastes pungent: add extra lemon juice or salt or chilli.
