A King Sized Bowl (or two) of Kheer

OH. MY. GOD!

It’s been a month since the launch of Vish’s Little Vittles, YAY! Time sure does fly by when you’re having fun or just stuffing your face with delicious foods! It seems like I have been nursing the thought of documenting my food journey for quite a while now, and I am so happy I took the leap with the website a month ago.

Today is a day for celebration. Which obviously translates to making something that I love and enjoy! It is currently extremely hot in Ahmedabad, India. Think upwards of 100° F and lows of 75°. TOO. HOT. I wanted something cool - both in temperature and for the stomach.  Only one thing came to mind - a king sized bowl of kheer

Kheer is a milky rice pudding. It is flavored with cardamom, nuts and of course saffron. Throughout my childhood I always levitated towards kheer and it soon became the protagonist of most of my memorable moments. While I love to eat it cold, some families have it warm. I like it super milky, but it can also be served almost like oatmeal consistency - just continue to cook it for longer.
