bombay vegetable sandwich

This is my mom’s favorite sandwich. It’s a quick snack with minimal effort.

100g potatoes
tomatoes, thinly sliced
red onions, thinly sliced
cucumber, thinly sliced
butter
sprinkle of chaat masala
green cilantro chutney
tomato ketchup
cheese, preferably Amul cheese for the complete Indian experience

  1. Wash the potatoes thoroughly and place in pressure cooker with enough water to cover them half way through. Cook on high for 6 whistles. Alternatively, you can cube the potatoes and boil them in water. I prefer the former method since it ensures less moisture in the final product. When cool to handle, peel and thinly slice the potatoes.

  2. You can either:

    1. Toast your bread on a skillet with butter and then layer in all the vegetables.

    2. Smear butter on bread, build the sandwich and grill the sandwich in a sandwich maker.

    3. Build your sandwich and just eat it as is.
