bhindi

While I gobbled this okra growing up, my brother ran the other way whenever mom made it for lunch. I love eating it with some yogurt and rice or roti.

150g okra, half inch circles
120g potatoes, half inch cubes
2 tbsp neutral oil
pinch hing
5-6 cloves garlic paste
¼ tsp turmeric
1 tsp ginger chili paste
1 tsp chilli powder
½ tsp salt
½ tsp dhana jeeru (coriander powder)
¼ tsp kitchen king masala
handful cilantro, finely chopped

  1. Heat oil on medium low. Add hing and allow to bloom. Next, sauté garlic for about a minute. Add the turmeric, chilli powder, ginger chilli paste & potatoes. Mix well and allow to cook for a minute. Then add the salt & okra. Mix thoroughly & cook covered for 5 to 10 mins stirring occasionally & checking for doneness.

  2. When the potatoes are almost done, add dhana jeeru & kitchen king masala. Mix well & cover again. Cook for about 10 to 15 mins stirring occasionally & checking for doneness. When ready, add cilantro and stir well!

  3. Serve hot with yogurt and rotis.
