Another naani recipe that is to die for. These soft bhatures go so well with chole!

* makes 8*

½ cup all purpose flour
½ cup atta (whole wheat flour)
1 tbsp yogurt
1 tbsp softened butter
¼ tsp salt 
¼ cup water
oil for frying

  1. Combine all the ingredients together and knead into a smooth ball. If you need extra water, add 1 tsp at a time. It doesn’t take longer than 5 minutes and comes together fairly easily. Allow to rest for at least 30 minutes to a few hours.

  2. Heat oil for frying to 200° C. Line a baking sheet with a couple of kitchen towels. Meanwhile, make 25g dough balls and and roll into circles 4 inches in diameter of even thickness. Do not use flour for dusting. When the oil is hot enough, add one rolled dough in at a time. Flip in 10 seconds and continue to cook for another 10 seconds. It should puff up nicely into one big ball. Use a slotted spoon to drain out excess oil. Transfer to prepared baking sheet to further drain excess oil. Serve hot with chole!
